Choc Mint Coconut Ice Cream

Including fermented foods like yoghurt in your daily diet is an excellent way to support your gut and immune health by supporting the growth of beneficial gut bacteria.


Ingredients:

3 cups coconut cream

1/3 cup 100% maple syrup

1 tsp vanilla extract

1 packed cup mint leaves

Handful dark chocolate chips


Method:

In your blender add ¼ cup coconut cream and 2 Tbsp water with the mint leaves.

Blend until well combined.

Pour mint mixture through a strainer.

Pour mint mixture back into your blender with the rest of the coconut cream, maple syrup and vanilla extract. Blend until well combined.

Pour mixture into an ice cream machine, add chocolate chips and combine until you have an ice cream consistency.

For a firmer ice cream pour ice cream into a tin and place in the freezer.


Serves 6-8.
